I think many mums can relate with me here. I love Ava so much it consumes me but she is the actual devil when it comes to eating, she loves fruit so that's great BUT will not touch a vegetable and I swear she is the fussiest human ever. I am in no way a good cook but I created this recipe quite a while back and it’s become a staple in the house because it's one of the only ways I can get her to eat vegetables. This has SOOOO many veggies in it and can be frozen so can save for nights you do not feel like cooking..

INGREDIENTS
2 small sweet potato
2 red capsicum
2 zucchini
2 carrot
Garlic to your taste (I use half a garlic, we love garlic in this house)
1 brown onion
Packet of pasta (I use shell or rigatoni so it scoops up more sauce)
One big Pasata sauce
1 flat tbsp beef stock powder (masells)
2 tbsp Italian herbs (masterfoods)
1 tsp basil
1 tsp oregano
Salt to your taste, I usually don’t put any in and just put it on my own so It’s not in Avas
Method
Preheat oven to 200 degrees
In a big pot boil water and cook pasta to pasta instructions.
Peel the sweet potato, zucchini and carrot and prepare onion, capsicum and garlic (can put garlic cloves in whole). Dice up all of the veggies and put in a baking dish. Cover in olive oil and some salt and pepper and toss around. Bake about 200 degrees for approx 30 mins maybe longer or until you can see they’re roasted. Once cooked take out of oven and let cool down for 10-15 mins
Drain pasta, leave the pasta in a colander and in that same pot put some olive oil in and heat up then put in grated onion and cook off (if you’re putting in protein source then do it here, I don’t put any in because Ava won’t eat it) then pour passata in and keep the jar. Add in herbs and stock powder. Let simmer for about 5-10 mins while you make veggie sauce.
Once veggies cooled down put in blender. Fill the passata jar bout a quarter way up, shake it up and pour it into the blender and then blend on high until it’s all completely smooth. You may need more water but wait and see before adding any
Pour into passata sauce and mix well. Once mixed then pour pasta in and stir sauce all through. Let it heat up so the pasta is warm then it’s all ready ❤
